Smoked Turkey Chowder

1-2cups of deboned smoked turkey meat

3-peeled coarsely chopped russet potatoes

1-2 medium  chopped, peeled  carrots

2-stalks of celery medium chopped.

1-medium sized onion, medium chopped.

1/2-1- can of cream style corn

2-3 cubes of chicken boullion

8 0z. whipping cream

8-12 0z. of water

4 tbsp. unsalted butter

2tblsp. flour

Directions are like any other chowder only add enough liquid to flavor, color your chowder. Chowders should have a thick , non pasty consistency.

1.Preheat a 5qt. dutch oven on low, add butter, drain potatoes, add to butter and add flour, do not brown.
2.Add only  enough water to cover potatoes to simmer without burning bottom.
3. Let potatoes simmer about 25-30 minutes,(fork tender) not mushy.
4. Add chicken bouillon, carrots, celery, onions.
5. Let contents simmer until veggies are fork tender, soup should be thickening up at the point.
6.Stir frequently, fold in smoked turkey, add enough whipping cream, creamed corn.

Simmer for another 15 minutes or until it thickens to your preference.
 Enjoy, pair with a nice Artisan crusty bread, rolls or corn muffins.

*You can smoke your own turkey on the grill, my husband smoked mine. Or you can purchase smoked turkey.


Pumpkin Soup Recipe

2-lb fresh pumpkin ( 2 cups) cubed

1- Sm. yellow onions chopped

2- garlic cloves chopped

1/2- tsp. dried thyme leaves

2- Bay leaves

2-tbsp. unsalted butter

1-tbsp. Olive oil ( extra-virgin)

2-cups Chicken stock/broth

1/2 -cup heavy whipping cream

Preheat a 10" non-stick pan on medium -low heat; add oil and butter.
Let the oils heat for approximately 1 minute.

Add pumpkin, onions, and garlic, saute in pan for 10 minutes or until pumpkin is slightly translucent.
(Do Not Brown)

Add thyme and bay leaves to the pan.Turn off heat.

Pour chicken stock into a 1-3 qt sauce pan, add the vegetables, bring mixture to a simmer.
Let ingredients simmer for 30 minutes or until pumpkin is soft enough to puree.

Place all of the ingredients into a food processor and pulse until mix is smooth. Or puree pumpkin right in the pot with a hand held blender ( not hand held mixer).

Lastly, pour puree back into to pan once again, whisk in cream or blend in by hand blender.
Serve immediately.

Recommended garnishes- Creme Fraiche, toasted pumpkin seeds, hand-crafted croutons or fried  Pancetta strips.
