Red Velvet Cake Recipe
2 1/2 c.sifted cake flour 1 1/2c Wesson pure vegetable oil
1 1/2c. sugar 1 tsp. white vinegar
1 tsp.baking soda 1 tsp. vanilla extract
1 tsp.salt 2 large eggs
2-3tbsp. cocoa powder 1 oz. red food coloring ( 1 bottle)
Pre-heat oven at 350 degrees Fahrenheit.
Sift flour soda, salt,and cocoa together, set aside. Beat together at medium speed, sugar and oil for 2-3 minutes if using an electric mixer or until sugar and oil are well blended. Add slightly beaten eggs to mix, one egg at a time.Then add vinegar, vanilla, and food coloring. Mix thoroughly,stir in flour until mixture incorporated.(Do not over beat) Pour mixture into 2-8inch round cake pans. Bake at 350 degrees for 25-30minutes, or until tester wipes clean from inserting in center of cake pan.Let cakes cool then frost.
Cream Cheese Frosting
2 ( 8oz.)pkg.cream cheese (softened)
2 -1 1b.box confectioners sugar
1/2 tsp. vanilla extract
1 tsp. butter (softened)
Optional- 1 c. chopped pecans * I prefer cake crumbs for the garnish instead of nuts.
Beat cream cheese and butter together until cream, then add vanilla, sugar until smooth and fluffy texture. Frost cake ,decorate as desired.
Double this recipe if baking 3 layers.
